How to Make Reduced Calorie Meatloaf

How to Make Reduced Calorie Meatloaf is another light and easy recipe. Save up to 100 calories following this recipe. This meatloaf makes great leftover sandwiches with whole wheat bread and spicy mustard instead of mayonnaise or ketchup. Serves 6-8, but beware there might be seconds. Total Time 2 hours

Ingredients:

1 yellow onion, chopped 
2 cloves garlic, minced 
1/2 cup finely chopped celery 
1/4 cup finely chopped green bell pepper 
1 tablespoon olive oil 
2 slices of day-old wheat bread, crumbled using a blender 
1 egg plus 2 egg whites
1/2 teaspoon pepper 
1/4 teaspoon each allspice & thyme 
1/2 cup freshly chopped parsley or 2 tablespoons dried parsley 
1/4 cup brandy 
1/2 lb ground lean beef
1/4 lb ground pork
3/4 lb ground turkey 
3 slices of tomatoes 

Directions:

Preheat oven to 350F. In a large skillet sauté onions, garlic, celery and green bell pepper in oil for 5 minutes. 

In a large bowl add the crumbled bread, vegetables, egg and egg whites, seasonings, brandy and meat s; combine by using your hands. Put the mixture in a 1 quart non-greased loaf pan and top with the tomato slices. No ketchup or bacon here.😢 Bake 1 1/2 hours. Remove a drain off fat. Let sit in a warm place for 20 minutes before slicing. Serve with a light tomato sauce made with sautéed onion and minced garlic puréed with several tomato slices and heated until warmed.
