I just bought some baby golden potatoes and want to prepare them in my Instant Pot. This recipe is for a 6qt Instant Pot, if you have an 8qt add an extra 1/2 cup of liquid. This recipe is for 6 servings and I’m going to cut it in half for just me, but I will still use 1/2 cup of vegetable broth. Total Time: 15 minutes
2 pounds baby potatoes washed and cut into halves
2 cloves garlic minced
1 teaspoon thyme
1 teaspoon oregano or rosemary
1/2 teaspoon ground black pepper
3 tablespoons unsalted butter, melted
1/2 cup vegetable broth
1 teaspoon sea salt flakes
Wash the potatoes, then slice them into halves (I don't cut the smaller ones and leave as a whole).
Mince the garlic, chop the herbs and add them to the pot. Sprinkle with sea salt flakes. Melt the butter in the microwave in a small jar, and pour it over the potatoes. Add the vegetable broth and make sure potatoes are well coated.
Secure the lid and seal the vent. Select the PRESSURE on high and set the cooking time for 7 minutes. The Instant Pot will take around 6-7 minutes to come to pressure and start cooking. When the cooking program ends, quickly release the steam. Carefully remove lid and serve.
