Wow that title is a mouthful for something that only takes about 10-15 minutes to make. First you need to make your dressing.
Dressing Ingredients:
1/2 cup diced shallot
6 tablespoons apple cider vinegar or white wine vinegar
1/2 cup extra virgin olive oil
2 tablespoons maple syrup
1 teaspoon salt
1/4 teaspoon pepper
Directions:
Combine shallot and vinegar in a jar (with lid). Let sit 15 minutes. Add rest of ingredients, cover and shake until blended. Taste test to see if additional salt and pepper are needed.
Salad ingredients:
1/2 small cauliflower, thinly sliced
1 Gala apple, sliced
5 cups baby greens
1/4 cup fresh parsley
2 tablespoons chives, chopped
Directions:
In a bowl add all the ingredients. Pour dressing over and toss to coat. Enjoy!
