Secondly, time management, since your potatoes are going to take the longest to cook, 10-15 minutes this gives you enough time to slice and dice the remaining ingredients instead of cutting them all at the same time.
Lastly, which ingredients can I get that will save me time? Well, with this recipe I opted for small B size yellow potatoes that I can leave the skins on and quarter instead of larger potatoes where you’d probably peel and cut in bite size cubes. If I can get away with not peeling potatoes, it’s wonderful!

Ingredients:
2 tablespoons olive oil
1 tablespoon butter
3-4 small B size yellow potatoes, quartered
14oz pkg of smoked sausage, sliced
2 bell peppers, diced (whatever color)
1 med onion, diced
2 cloves garlic, minced
Salt and pepper, to taste
Optional seasonings: Italian seasoning, basil, Cajun
Directions:
In a large skillet on medium/high heat add your oil and butter. When melted add the potatoes, season with salt and pepper and cook until tender crisp, 10-15 minutes. Remove with a slotted spoon to a paper towel covered plate to soak up any grease.
Reduce heat to medium, add the sliced smoked sausage to your skillet and cook for 3 minutes on each side until browned. Add in the onions and peppers cook until onions are translucent and peppers softened. Add in garlic cook addition 30 seconds. Return potatoes to skillet, stir, add more salt and pepper, if needed and any seasoning you desire.
