I need to go to the grocery store and I don’t feel like a heavy meal. So, I make a list of items I have in my refrigerator and google recipes.
This is my list:
2 red apples
1/3 of a head of lettuce
1 1/2 cups baby spinach
Onions
English muffins
5 oranges
5 Yukon potatoes
5 hard boiled eggs
6 eggs
1/2 loaf of bread
Various beverages
3 carrots
Parmesan cheese
1/3 bag of shredded pepper jack cheese
Various condiments
The top three need to be eaten so that’s what I googled. And the recipe I found was:
1 package (5-ounces) Baby Romaine Lettuce
2 cups fresh baby spinach
8 bacon slices , cooked to a desired crispness and crumbled
3 to 4 medium-sized red apples , chopped
1 cup chopped walnuts
1 cup crumbled French feta cheese
Maple-Balsamic Vinaigrette Recipe:
1/4 cup extra virgin olive oil
2 teaspoons golden balsamic vinegar
1 teaspoon Dijon mustard
1 tablespoon pure maple syrup
salt and fresh ground pepper, to taste
The above recipe serves 6 with a total time of 20 minutes. It’s just me so this is what I made with what I had.
1/3 head of lettuce, chopped
1 1/2 cups of spinach
2 red apples, sliced
2 slices of bacon, cooked and crumbled
1/3 onion, sliced (optional)
1/2 cup toasted almonds
1/2 grated Parmesan cheese
The only ingredient I substituted on the dressing was regular balsamic vinegar instead of golden.
Directions are super easy ..in a bowl combine all the ingredients and drizzle on the dressing.
