How to Make a BLT Salad with a Poached Egg & Homemade Warm Bacon Vinaigrette

Yes, this BLT Salad with a Poached Egg & Homemade Warm Bacon Vinaigrette is one of my favorite lite meals to make. It takes about 20 minutes and the warm bacon vinaigrette is so yummy. Make sure your bacon is well done and crispy. Don’t throw out that marvelous grease, because that’s what you use to make your dressing. Just add 2 tablespoons of red wine vinegar and 1 tablespoon Dijon mustard. And as Chef Anne Burrell would say “that’s it, your done!” Serves 4

Ingredients:

4 eggs, poached (2 minutes in boiling water, use slotted spoon to remove to a paper towel)
1 head of lettuce, cut into quarters (1 quarter per person) and roughly chopped 
4 tomatoes, diced (1 tomato per person)
8 slices of bacon, cooked and crumbled (2 slices per person)
2 cups shredded cheese of your choice (1/2 cup per serving) I used pepper jack but a sharp cheddar would be just as good. 
Salt and pepper, to taste
Homemade Warm Bacon Vinaigrette, drizzled over top

Directions: 

On 4 salad plates add the lettuce, then the tomato, bacon and cheese. Top with a Poached egg, salt and pepper, to taste then drizzle on some vinaigrette.
