They also come in different sizes as you can see here. We are going to use large shrimp for this recipe. Typically large shrimp you use 5-7 per person or 1 1/4 lbs for a serving of 4.
In addition to the shrimp the following ingredients are needed:
6 cloves of garlic, minced
1 teaspoon dried thyme
2 tablespoons olive oil
1 1/2 pounds of small yellow potatoes, large diced or quartered
2 tablespoons butter
Finely grated zest of 1 lemon
1/2 cup green onions, chopped, optional
2 tablespoons freshly chopped parsley
Directions:
In a saucepan add the potatoes and cover with water, bring to boil and cook until fork tender. Check at 15 minutes, you want them tender not mushy. Drain *Tip: if you dice or quarter them evenly they should all be ready at the same time.
In a large skillet on medium heat add 2 tablespoons olive oil. When heated add the shrimp, cook 6-8 minutes. Add in the butter, when melted add in the thyme, garlic and lemon zest, stir and cook an additional minute. Add in the potatoes, stir to combine. Remove to a serving dish. To garnish: top with the green onions, if using and sprinkle on the freshly chopped parsley.
