How to Make Smoked Sausage Potatoes Peppers Bake


 Do you ever buy smoked sausage at Sam’s Club? You get so much of it, you often wonder what you’re going to do with it all. Do you separate it and freeze what you don’t need? I think this is my fifth recipe for smoked sausage. The other ones are: Sausage Hash (which is close to this recipe), Smoked Sausage with Peppers and Onions, Smoked Sausage Mac & Cheese with Broccoli and Crockpot Sausage and Sauerkraut with Apples. My favorite so far is the Mac & Cheese one, cause now I like broccoli mixed with it. What’s your favorite smoked sausage recipe? Serves 8 

Ingredients: 

  • 1 1/2 lb (650g) small baby potatoes, quartered
  • onion, minced
  • red bell pepper, sliced
  • 1 package smoked sausage
  • 4 tablespoons olive oil (or butter, or ghee)
  • 2 teaspoons Italian seasoning
  • 1/2 teaspoon red chili pepper flakes, optional or to taste
  • 1/2 teaspoon minced garlic
  • 1/4 cup (60ml) low-sodium stock (chicken, beef or vegetable…)
  • 1 teaspoon hot sauce of your choice, optional 
  • Salt and fresh cracked pepper, to taste 
  • Chopped parsley, for garnish
  • Grated Parmesan, optional (or mozzarella, or fontina) 
Directions:

1. To make the smoked sausage and potatoes recipe: In a large cast-iron skillet, heat 3 tablespoons of oil over medium heat. Add the baby potatoes to the pan and season with salt and pepper. Saute until golden and cooked through, around 10-12 minutes, stirring regularly. Transfer potatoes to a plate, cover and set aside.

2. In the same skillet with the remaining tablespoon oil, brown the sliced smoked sausage on all sides for around 5 minutes over medium heat. Add garlic, onion, and red bell pepper and season with red pepper flakes, if using, Italian seasoning, salt, and pepper. Cook smoked sausage for 2 to 3 minutes until softened. Deglaze with 1/4 cup stock, stir in the hot sauce, if using and stir to coat the smoked sausage and veggies. On a platter add the potatoes and the sausage, top with chopped parsley and grated cheese.

  1. *TIP It’s hard for me to cook potatoes through in a skillet without them getting too brown, so after they become golden brown I add a cup of vegetable broth, cover and cook them for 10 minutes or until the broth is gone. Repeat if not tender enough.
